Ingredients
- 175g of Softened butter
- 2 eggs
- 115g Caster Sugar
- 300g of Grated Carrot (Approx. 3 Large Carrots)
- 55g of finely chopped walnuts or Alternatively 55g of Raisins
- 2 Tbsp Orange Juice
- Grated peel of half an orange
- 1 Tsp Ground Cinnamon
- 175g Self Raising Flour
Frosting Ingredients
- 115g Full Fat Cream Cheese
- 225g Icing Sugar
- 1 Tbsp Orange Juice
Method
1) Put the softened butter and caster sugar in a large bowl and beat until they form a light and fluffy mixture.
2) Afterwards add the eggs beating them into the mixture.
3) Gradually fold in the grated carrot to the mix a small amount at a time.
4) As we were making a batch of Carrot Cake Cupcakes for someone who disliked walnuts we are using 55g of Raisins for our recipe.
You should fold them into the mixture making sure that they are distributed as evenly as possible.
5) Once they are mixed, add in the orange juice and orange peel.
6) Finally sift in the Self Raising Flour and Cinnamon .
7) Spoon the mixture into the 12 cases in a baking tin. We usually use silicone cases to try and be a bit more eco-friendly.
8) Bake them in the preheated oven for 15-20 minutes
9) Once firm to the touch, put the cakes onto a wire rack to cool. They must be fully cooled before putting on any type of decoration or frosting.
10) For the Cream Cheese frosting you need to put the cream cheese and orange juice in a bowl, sift in the icing sugar and mix until fluffy and light.
Top Tip: If you do not want to make your own Cream Cheese Frosting then you can buy ready made from most baking sections of supermarkets. It makes it a little easier and tastes great.
Whatever frosting you choose you can put it into a piping bag and work up the frosting into small peaks.
11) All you need to do now is decide how you will finish your decoration. Here are some examples of the cakes that we have made. Sugar Carrots or Rice Paper Butterflies give a colourful finishing touch. Or you can just leave them un-decorated for a more traditional look.
