Banana Bread

Perfect to serve with lashings of butter and a cup of tea. Yum!

Ingredients

  • 285g / 10oz Plain Flour
  • 1 tsp Bicarbonate of Soda
  • 1/2 tsp Salt
  • 110g/4oz Butter or Margarine
  • 225g / 8oz Sugar or Caster Sugar
  • 2 Medium Eggs ( whisked lightly together)
  • 4 Ripe Bananas (Mashed) tip : Mash with a potato masher
  • 85ml/ 3floz Milk
  • 1 1/2 tsp Lemon juice
  • 1 tsp Vanilla Extract

Pre heat the oven to 180 °C

1) Firstly grease a 8" x 5" loaf tin.

2) Sieve flour, bicarbonate of soda and salt into a bowl and set aside.

3) Cream together the butter and sugar in a separate bowl until light and fluffy.

4) The add in eggs, mashed bananas, milk and vanilla extract. Mix well with the butter and sugar mixture. (It may look curdled but don't worry)

5) Fold in the flour

6) Pour into your greased loaf tin and bake for about an hour, until well-risen and golden 

7) Let it cool for a few minutes in the loaf tin and then remove and cool on a wire rack

8) Cut a slice and enjoy
